Every syrup we serve is made in-house from 100% cane sugar — no corn syrup, ever. Prefer to skip the sugar? We also offer a sugar-free option made with artificial sweetener.

What Makes it New Orleans Style?

It's the creamy flavors — built with cream toppings, condensed milk, and chocolate for a rich, dessert-like snowball you won't find just anywhere. Customer favorites include Strawberry Cheesecake, Dreamsicle, Orchid Cream Vanilla, Grandma's Nectar Cream, and Boston Cream Pie.

Our Staff

We take care of our team the way we'd want to be taken care of: a $18/hr minimum wage, health coverage with subsidized mental-health care, paid financial-literacy training, sick pay, and retirement matching. We run on the Great Game of Business, and it shows — our crew's average tenure is 4+ years. In 2023, the whole team celebrated together with an arcade outing.

Who is Casey?

The name is a nod to Casey's family stand from Metairie, Louisiana in the 1960s — no business relationship, just family history. Here's our own Austin story, told year by year.

  1. 1996 — Founded in Austin by Suzy Casey Gallagher and Kit Thompson. Suzy came from the original Casey's family in Metairie, LA.
  2. 1999 — Pattye Henderson and Cliff Chapman join the business; Cliff starts up the kitchen.
  3. 2008 — Pattye and Cliff take over day-to-day operations.
  4. 2012 — Son Mars takes over daily management.
  5. 2017 — Catering launches, along with our blue food truck.
  6. 2020 — Casey's joins Good Work Austin.
  7. 2024 — A zero-emission catering truck joins the fleet.
